Confessions of a coconut oil newbie - IT'S A GIVEAWAY



Over the past few years I have read many things about using coconut oil but I was a little perplexed as to how I would incorporate it into my diet. I was intrigued by the vast array of recipes (and videos! http://www.youtube.com/user/TropicalTraditions) that I could access so I finally decided to take a chance and bought a couple of jars. Here are my confessions: A) Since I am a wimp when it comes to food "experimentation," B) I let those jars sit in my cupboard, unopened, for several months! (Hey, I'm being real here, folks!)

Every time I reached into that cupboard those two jars of coconut oil would beckon me to try it. A few weeks back I bought a packaged brownie mix and thought "I might as well use this as my test project!" Instead of using 1/3 cup of vegetable oil as called for in the recipe I substituted 5 Tbsp of coconut oil. Let me tell you that these were the most moist and delicious brownies I have ever made! It took my family about four days to finish the pan of brownies, and the last brownie was just as moist as the first one! I gained confidence after this first experiment, and have since used many different coconut oil recipes, to include salad dressings, smoothies, soups, and cookies. I will be trying out some entree recipes real soon. So, now I am an official virgin coconut oil convert! (I really am fascinated that there are hundreds of uses for coconut oil!   3. This is VERY timely! I also have a jar of coconut oil that's been sitting around for like a month. I understand it's great for high heat frying/sauteing, as well as great in home-made beauty products. I hadn't thought of substituting it for oil in baked goods. Is this coconut oil also "solid" in the jar? Do you use it more like crisco? My understanding is that one of the benefits of coconut oil is that it's solid in the pantry, but "melts" with very little warmth, which is why it's great in lotions. Do you know if it can be substituted in recipes that call for butter or oleo, or just in those recipes that call for oil? I LOVE coconut, and I also have IBS, and coconut is wonderful for IBS. I'm wondering if the oil will have the same effect on the IBS as straight coconut.

    1. The consistency of Tropical Tradition's coconut oil is softer than Crisco. I would imagine you could also use it to substitute butter and/or oleo without a problem. I certainly hope use of this great product will help with symptoms of IBS. TT has a wealth of information on their website, and they are very timely in answering questions via their "Contact Us" form. I hope you will use them as a resource, and open up that jar! :)

  4. I have never tried coconut oil. At this point I would really have to research it to make sure it is safe for diabetics!! I always have loved the taste of coconut--keeping my fingers crossed!

    1. Although I love the taste of coconut as well I cannot detect the taste of coconut with this product. It does not have the taste of a can of coconut milk nor flaked baking coconut. In regard to your concerns about diabetes, I hope you will research it. I researched before purchasing this product myself so I can understand where you are coming from on this subject.

No I have yet to try coconut oil but if I win this giveaway I will be giving it to my mom who is in the nursering home and will be 89 years old on the 27th April 2013 and is unable to walk because her feet are swollen and keeping her confined to her room.
