Fast, Cheap, and Easy.


When it's hot out I like to keep the cooking to a minimum to keep from heating the house up. Anything that can be cooked on a small appliance is a real winner.If it's a quick fix, doesn't cost a lot, and is easy, I'm even more on board. One of our absolute favorite fast, cheap, and easy small appliance meals is chicken quesadillas. They can be made on/in several appliance. Indoor electric grill, toaster oven, sandwich press, electric griddle, or even a waffle iron. We've also made them on a campfire and an outdoor grill, which makes them great for camping too.
This recipe is great for utilizing leftover chicken. If I plan on making chicken quesadillas I'll throw a couple extra pieces of chicken on when I'm making dinner, or I'll grab a rotisserie chicken at the deli. My grocery store sells pre-cooked, seasoned, refrigerated chicken strips in the meat section and I've used those on short notice.

One of my favorite things about chicken quesadillas is how versatile they are. We have them in a standard, "traditional" style most often but sometimes we like to mix it up. Sometimes I leave out the green chiles and use buffalo style chicken and we dip them into ranch dressing. Other times I leave out the chiles and the onion and add in chopped ham and we dip them in honey mustard sauce. The variations are endless.


Chicken Quesadillas

Ingredients:

2 cups pre-cooked, chopped chicken
2 cups Mexican cheese blend
1 can of diced green chiles
1 small sweet onion, finely diced
2 packages of large flour tortillas

Directions:

Mix first 4 ingredients in a medium sized bowl. Lay out a tortilla and spread an even layer of mixture, leaving a 1/2 bare around the edge. If your cooking surace is big enough, cover whole tortilla, but for a smaller cooking surface only cover half. Place a second tortilla on top, or fold tortilla over. Cook until tortillas are lightly browned and crispy around the edges. If you are using a skillet, griddle or standard grill you will have to flip them so I recommend using the folded fill. This recipe makes 8 to 10, depending on how thick you fill them.

Serve with sour cream, guacamole, and salsa for dipping.







Chicken quesadillas are perfect for a party, or a snack also. The mix can be made up ahead of time and they can be put together and cookeded in a matter of minutes.
