Ranch Squash Casserole

Squash Casserole is a staple at every family gathering. Whether it's for Thanksgiving, Friendsgiving, or Christmas dinner, it's just a must-have dish!   With just a touch of ranch seasoning, you can bump this up a notch and have Ranch Squash Casserole.  This elevates the flavor of this classic dish.   Making this is a breeze and your guests will come back for more.



 Ranch Squash Casserole

Items needed:

10 cups Squash (sliced & halved) (around 8 to 10 medium sized Squash)
2 ½ cups shredded Sharp Cheddar Cheese
2 large Eggs (beaten)
1 Tablespoon  Ranch Dressing & Seasoning Mix
1 cup Mayonnaise
1 cup Pepperidge Farm Cornbread Stuffing
Non-Stick Cooking Spray

Pre-heat oven to 350 degrees. Spray a 9x13 inch glass baking dish with cooking spray, set aside. Bring a large pot of water to a boil over medium-high heat. Add squash and cook for around 18 minutes or until squash is tender. Drain in a colander, then add to a large mixing bowl. Absorb some of the water from the squash with a paper towel. Using a potato masher, mash the squash. Add the remaining ingredients and stir until combined. Pour into the baking dish and bake uncovered on the 3rd (middle) rack for around 30 minutes.

Angels are amongst us and this has definitely been true during the last few weeks of my life. My child's father passed away recently and our lives have been turned upside down. My son is autistic and nonverbal and dealing with the emotional trauma we both felt has been tough. We have some angels among us, though. Keeping the faith and believing has been our saving grace.
