Avocado season is in full swing and the price of these delectable fruits has come down to a price that makes it friendlier to making guacamole. I do make guacamole year round, regardless of price, but from April thru September when the prices are down, we have guacamole in the fridge pretty much constantly.
Guacamole is the perfect snack food for kids. Every ingredient is a fruit or vegetable. Avocados are full of healthy fats which help us better absorb antioxidants from the other fruits and vegetables, plus they themselves contain vitamins C, and E, potassium, and fiber.
Tomatoes contain vitamin C and lycopene, which according to studies, can help ward off cancer.
Garlic can reduce blood pressure, risk of heart disease, lowers cholesterol, can ward off illness and many other health benefits.

Limes are full of vitamins and minerals, help regulate sugar absorption, and can aid in relieving symptoms of nausea and congestion.
Guacamole is basically a super food!
Since we always have guacamole on hand for snacking, I try to keep baked tortilla chips on hand. I usually make my own with corn tortillas, but sometimes I can find them in stores. One of my kids likes to eat it with baby carrots, and another likes it on shredded lettuce with a dollop of sour cream. He calls it a guacamole salad, and it is really good.
My recipe isn't "traditional" but it is delicious.
Guacamole
Ingredients:
6 ripe Avocados, peeled and pitted
5 medium tomatoes, seeded and diced small
1/2 of a sweet purple onion, finely diced
2 Table Spoons minced garlic, I use the stuff from the jar
Juice of 1 large lime
salt to taste
Directions:
Smash avocados in a large bowl. We like it creamier so I smash it a lot, but most people prefer it a little chunkier, so smash it to your liking. Add in the rest of the ingredients and stir. Voila! Guacamole!
Sometimes I will add some sour cream to the avocado and blend it in a food processor to give it a light fluffy consistency, then stir in the rest of the ingredients. This makes it very smooth and gives it a little zippy tang that I think is perfect for snacking with a drink late in the evening.
I could eat guac every day! It's delicious AND good for us :)

ReplyDeleteI love guac, and I know it's one of the healthiest mixtures out there! One of my favorite stores happened at a grocery store not long ago. I was unsatisfactorily trying to choose a perfect avocado, and a complete stranger leaned in to help me. She said she works at a Mexican restaurant and makes guacamole all day long, so she chose the perfect fruit for me and went on!! I will always remember the delicious avocado she chose for me!
