Peanut Butter Perfection

This will make your taste buds scream with delight.  This is so very easy to make and great for dessert.  Make it and take it to your next gathering and watch it disappear.


(Culinary.net) If you’ve ever taken a bite of something and the only word that came to mind was “yum,” you know what it’s like to experience this dessert. It’s fluffy, sweet, perfectly crumbly and tastes delicious. It’s rich but light. It’s a dessert that will likely never go out of style.

You can stop guessing what it may be: this treat is a scrumptious bite of Fluffy Peanut Butter Pie drizzled with chocolate syrup. You will understand the craze once you sink your fork into the chilled triangle resting on your plate. With a chocolate cookie crust and a thick, delicious peanut butter filling, this pie is everything many people want in a dessert.

Although it tastes like you have been in the kitchen all day, it’s a simple-to-make, delightful treat with luscious peanut butter flavor that melts in your mouth.

To make this pie, remove the filling from 20 chocolate cookies and crush them with a rolling pin until they are just crumbs. Mix cookie crumbs with melted butter and mold into a pie dish to create the crust.

Next, in a mixer, combine cream cheese and reserved cookie filling. Then add sweetened condensed milk, peanut butter, lemon juice and vanilla extract while you continue mixing.

In a mixing bowl, beat whipping cream until stiff peaks form. Fold peanut butter mixture in with the whipping cream.

Layer the peanut butter and whipping cream mixture on top of the crust in the pie pan. Chill for about 4 hours then drizzle with chocolate syrup just before serving.

This dessert is perfect for anyone with a sweet tooth. House guests, birthday parties or even just a simple treat after a meal; it’s an any-occasion kind of pie.

Fluffy Peanut Butter Pie

Servings: 6-8

  • 20        chocolate cream-filled cookies
  • 1/4       cup butter, melted
  • 1          package (8 ounces) cream cheese, softened
  • 1          cup smooth peanut butter
  • 1          can (14 ounces) sweetened condensed milk
  • 3          tablespoons lemon juice
  • 1          teaspoon vanilla extract
  • 1          cup whipping cream
  • chocolate syrup
  1. Remove cream filling from chocolate cookies; set aside. With rolling pin, finely crush chocolate cookies.
  2. In medium bowl, combine finely crushed cookies with melted butter.
  3. Press crumb mixture firmly into bottom and sides of 9-inch pie plate; chill while preparing filling.
  4. In large bowl, beat cream cheese until fluffy. Add reserved cookie cream filling, peanut butter and sweetened condensed milk; beat until smooth. Stir in lemon juice and vanilla extract.
  5. In medium bowl, beat whipping cream until stiff peaks form. Fold whipped cream into peanut butter mixture. Mix until combined.
  6. Pour into crust. Chill 4 hours, or until set. Drizzle chocolate syrup over pie before serving.
  7. Cover leftovers and store in refrigerator.

Patriotic Pound Cake Trifle

Get ready for the 4th of July celebrations!

Living in the good ole USA, we have many holidays to honor our country and the men and women who serve in our military.  This colorful and festive pound cake trifle is easy to make and a great way to show you care.



2 sticks unsalted butter, room temperature
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
3/4 cup sour cream
2 cups cake flour
8 ounce package of cream cheese, softened
14 ounce can sweetened condensed milk
container of whipped topping (thawed)
2 pints of fresh blueberries
2 pints fresh strawberries, stems removed


Preheat oven to 300 degrees.  Lightly grease a tube pan (Bundt), then line the bottom with wax paper.  Set aside. We are about to make this cake!

Grab a large mixing bowl and your electric mixer and let's start making this pound cake. Beat butter while adding the sugar. Beat in the eggs, ONE AT A TIME!  Then, add the vanilla extract. Beat in sour cream and cake cake.  Mix until everything is combined.

Pour batter into tube cake pan and bake in the oven for one hour and 20 minutes.  Remove and let cool completely (yes, I know this is hard.  Just walk away from the pound cake for now.

In a mixing bowl combine the softened cream cheese and the can of condensed milk'.  Fold in the whipped topping. and set aside.  I said SET ASIDE. This is your custard.

Now, back to the pound cake.  Start cutting it into cubes and use half of the cake on the bottom of your trifle. Add a layer of blueberries and then half the custard.  Cut some of the strawberries in half and start placing them inside of the trifle on top of the custard,  Add another layer of the cake, then the custard.  To top it all off slice strawberries and layer them inside the trifle .  Place remaining blueberries in the center of this masterpiece!  let it set in the fridge for about 2 hours before you serve.

I will admit I have used a store bought pound cake to make this dessert, since most grocery stores have a bakery,  a variety of pound cakes is always  available.  This is great when time is a factor!

Ranch Squash Casserole

Squash Casserole is a staple at every family gathering. Whether it's for Thanksgiving, Friendsgiving, or Christmas dinner, it's just a must-have dish!   With just a touch of ranch seasoning, you can bump this up a notch and have Ranch Squash Casserole.  This elevates the flavor of this classic dish.   Making this is a breeze and your guests will come back for more.



 Ranch Squash Casserole

Items needed:

10 cups Squash (sliced & halved) (around 8 to 10 medium sized Squash)
2 ½ cups shredded Sharp Cheddar Cheese
2 large Eggs (beaten)
1 Tablespoon  Ranch Dressing & Seasoning Mix
1 cup Mayonnaise
1 cup Pepperidge Farm Cornbread Stuffing
Non-Stick Cooking Spray

Pre-heat oven to 350 degrees. Spray a 9x13 inch glass baking dish with cooking spray, set aside. Bring a large pot of water to a boil over medium-high heat. Add squash and cook for around 18 minutes or until squash is tender. Drain in a colander, then add to a large mixing bowl. Absorb some of the water from the squash with a paper towel. Using a potato masher, mash the squash. Add the remaining ingredients and stir until combined. Pour into the baking dish and bake uncovered on the 3rd (middle) rack for around 30
minutes.

Ingredients:
  • Sliced Lemons, oranges, strawberries and blueberries to taste
  • 1 Bottle white wine of choice
  • 2-4 Tablespoons sugar
  • 2 Shots white rum
  • 2 Cups Reed’s Real Ginger Ale
Instructions:
  • Start with the freshly sliced lemons and oranges in a large pitcher
  • Pour the bottle of wine into the pitcher
  • Add in two to four tablespoons sugar, depending on how sweet you like your sangria
  • Add two shots of white rum
  • Muddle the fruit, rum, and wine with a big spoon
  • Add two cups of Reed’s Real Ginger Ale
  • Pour into a glass with ice, add in strawberries and blueberries and enjoy!



Reed’s Watermelon Ginger Frozen Margarita
Ingredients:
  • 4 cups of cubed watermelon, frozen
  • 3 ounces lime juice
  • 3 ounces tequila
  • 1 Can of Reed’s Real Zero Sugar Ginger Ale
  • Lime slices, for garnish
  • Ice (optional)
Instructions:
  • In a blender, add watermelon, lime juice, tequila and half a can of ginger ale
  • Blend until watermelon is incorporated
  • Add remaining ginger beer and blend until smooth
  • Pour and serve!
  • Optional: garnish with a watermelon wedge

Reed’s Strawberry Ginger Spritzer
Ingredients:
  • 24 oz. Soda Water
  • 1 Can Reed’s Real Ginger Ale
  • 2 cups of Dry White Wine
  • 1/4 cup of roughly chopped fresh basil leaves
  • 5 whole strawberries halved
Instructions:
  • In a pitcher, combine the soda water, ginger ale and (if used) white wine and stir
  • Add in the strawberries and fresh basil
  • Chill for 30 minutes to infuse the strawberry and basil flavor
Recipe Notes:
If wanting to drink right away, you can muddle a few of the strawberries and basil at the bottom of the pitcher before adding the liquid to infuse the flavor quicker

Combine lemon juice, Truvia and water in pitcher, stir to mix.  I like the drizzle the juice from the blackberries to make an ombre effect in the juice.  It makes for a dramatic drink!  Chill for 2 hours and serve.

Dixie Peach Vodka Recipes

Peach Mule
2 oz. Dixie Peach Vodka
Ginger beer
1 lime wedge
1 fresh peach slice
Fill a copper mule mug with ice. Add Dixie Peach Vodka and ginger beer. Squeeze lime into mug, and garnish with a fresh peach slice.

Dixie Peach Bellini
1 oz. Dixie Peach Vodka
Sparkling wine or Champagne
1 fresh peach slice
In a Champagne glass our coupe, add Dixie Peach Vodka and top with sparkling wine or Champagne. Garnish with a fresh peach slice.

Frozen Peach Bellini
2 oz. Dixie Peach Vodka
1 lemon wedge (squeezed and discarded)
0.5 oz. (or 1 bar spoon) agave nectar
1 c. ice
Sparkling wine or Champagne
1 fresh peach slice
1 sprig of mint
Add Dixie Peach Vodka, juice from lemon wedge, agave nectar, and ice into a blender, and blend until smooth. Serve in an old fashioned glass, top with sparkling wine or Champagne, and garnish with a fresh peach slice and sprig of mint.

Dixie Peach Tea
2 oz. Dixie Peach Vodka
6 oz. sweet tea
1 fresh peach slice
1 lemon wheel
Fill a mason jar with ice, and add Dixie Peach Vodka and sweet tea. Garnish with peach slice and lemon wheel.

Practice What You Peach
2 oz. Dixie Peach Vodka
2 oz. lemonade (pro tip: use Chick-fil-A lemonade — there’s nothing better!)
2 oz. sweet tea
1 fresh peach slice
1 sprig of mint
Fill a mason jar with ice, and add Dixie Peach Vodka, lemonade, and sweet tea. Garnish with peach slice and sprig of mint.

Peach on the Beach
2 oz. Dixie Peach Vodka
2 oz. orange juice
2 oz. pineapple juice
1 lemon wedge
0.25 oz. PAMA (or grenadine)
Fill a cocktail shaker with ice, add all ingredients except PAMA or grenadine. Shake vigorously. In a Champagne glass or coupe, pour PAMA or grenadine, and strain cocktail on top (pineapple juice will make foam on top of the cocktail, with grenadine on bottom, the cocktail will be layered).

Southern Sangria
1 c. Dixie Peach Vodka
1 bottle dry white wine
Various fresh fruit/herbs (peaches slices, lemon wheels, lime wheels, orange wheels, blackberries, mint leaves)
Combine all ingredients in pitcher. Allow to sit for at least one hour before serving. Serve over ice with fruit from pitcher.

Peach Collins
1.5 oz. Dixie Peach Vodka
0.5 oz. lemon juice*
0.5 oz. simple syrup*
Soda water
1 peach slice
1 lemon wheel
In a Collins glass with ice, combine Dixie Peach Vodka, lemon juice, and simple syrup, and top with soda water. Garnish with peach slice and lemon wheel.
*Can substitute sour mix for lemon juice and simple syrup.

  • 6 mint leaves
  • 50ml Bitter Lemon 

Fill up glass with ice, pour Jaisalmer Gin, clap 6 mint leaves and add to the glass. Add fresh lemon juice, bitter lemon and agave syrup. Stir gently and garnish with a mint sprig.

Mr. and Mrs. Potato Head Cookies


I am a HUGE Toy Story and I love all of Andy's friends, especially Mr. and Mrs. Potato Head. Having a child with ASD (autism spectrum disorder), the series of Toy Story movies have become some of our favorites since the very first one. Toy Story 4 is in theaters beginning June 21 and we were inspired to make some cookies of our favorite characters.

I have included all the ingredients and step-by-step directions.

What You Will Need:

Your favorite sugar cookie cutout recipe, prepared
Your favorite frosting recipe (white)
Black Fondant
Pink Fondant
Orange Fondant
Red Fondant
Yellow Fondant
Brown Food Coloring Gel
Yellow Food Coloring Gel
Candy Eyes (or use fondant)
Candy Moustaches (or use fondant)



Roll out your sugar cookies, and use an egg shaped cookie cutter to cut out as many cookies as you can.
Bake according to the recipe, and set aside to cool completely.


Place your frosting in a bowl, and add in brown and yellow food coloring until you get a light brown color.
Frost the cookies evenly, avoiding the edges.


Place two eyes about ⅓ of the way down on each cookie.


Roll a piece of pink fondant into a 3D triangle for Mrs. Potato Head cookies. And roll a piece of orange fondant into a 3D triangle for Mr. Potato Head cookies.


Roll a piece of pink fondant into a 3D triangle for Mrs. Potato Head cookies. And roll a piece of orange fondant into a 3D triangle for Mr. Potato Head cookies.


Place a moustache candy between Mr. Potato Head’s nose and mouth.
Take a medium sized piece of red fondant, and roll like a snake. Shape into mouths for Mr. and Mrs. Potato Head.
Place a thin sheet of black fondant behind Mr. Potato Head’s mouth if you would like it to be open
.


Roll thin pieces of black fondant, and place them above the eyes for eyebrows. 

Roll a large piece of black fondant into a sheet, and shape it into a hat for Mr. Potato Head cookies. 

Frost the very top of Mrs. Potato Head cookies with remaining white frosting to make her hat. 

Roll five small balls of orange fondant, and place them into the shape of a flower, and add it to the center of Mrs. Potato Head’s hat.

Watermelon Waffles



What's better in the summer than a big slice of watermelon?  Growing up I loved that bright pink fruit that tasted so good and the spitting the seeds at my brother after every bite.  I still do.  If you love watermelon as much as I do, you will love this recipe for Watermelon Waffles.  The recipe will make 4 full waffles.


Ingredients:
  • 2 Eggs
  • 1 3/4 C Milk
  • 1 TBS Sugar
  • 1 TBS Baking Powder
  • 1/2 tsp Salt
  • 1/2 C Oil
  • 2 C Flour
  • 1 Handful Chocolate Chips
  • Red and Green Food Dye
Directions:
  • In a medium mixing bowl, whisk together the eggs and milk.







  • Add in the sugar, baking powder, salt and oil.  Mix until well combined and there are no lumps.


  • Whisk in the flour until just combined, DO NOT OVERMIX!

  • Take 1 1/2 cups of the waffle batter and place into a separate bowl.


  • Add several drops of green food coloring to the small bowl of batter.
  • In the large bowl, add several drops of red food coloring, and a handful of chocolate chips.


  • Grease a hot waffle iron (if yours requires it), and add a large scoop of the red waffle mix to the center.
  • Use a small spoon to ladle a thin layer of green batter around the edge.


  • Sprinkle a few more chocolate chips, if desired, and cook to your preference.
  • Serve warm with syrup, whipped cream, or just by themselves.
  • Enjoy!

A Star is Born- Gin Fizz ft. Benham’s Gin

Ingredients
1.5 oz Benham’s gin
3/4 oz Fresh lemon juice 
0.5 oz Simple syrup
1 oz Chilled Zonin Prosecco
Lemon twist, for garnish

Directions
Fill cocktail shaker with ice; add gin, lemon juice, and simple syrup. Shake vigorously for 20 seconds; strain into glass and top with Prosecco. Garnish with a lemon twist.


Bohemian Rhapsody- Harvey Wallbanger ft. Ravo Vodka 

Ingredients
1.5 oz Ravo Vodka
4 oz Fresh orange juice
0.5 oz Galliano L'Autentico
Orange slice and cherry, for garnish

Directions
Pour vodka and orange juice into a collins glass with ice. Layer the Galliano on top by pouring it slowly over the back of a bar spoon. Garnish with an orange slice and cherry.



Roma- Añejo Old Fashioned ft. Tequila Partida Añejo 

Ingredients
3 oz Partida Añejo Tequila
¼ oz Agave nectar 
1 dash Angostura bitters
1 Orange peel
1 Brandied cherry 

Directions
In an Old Fashioned glass, lightly muddle the agave nectar, bitters and orange peel. Fill with ice and add the tequila. Stir and garnish with a brandied cherry.


Black Panther- The Famous Smoky and Cola ft. The Famous Grouse Smoky Black 

Ingredients
1 oz Famous Grouse Smoky Black 
.05 oz Cola 
Orange wedge 

Directions
Take a clean, highball glass and fill with fresh, solid ice cubes. Squeeze in a wedge of orange and drop into the glass. Add Famous Grouse Smoky Black. Top up with cola, stir and serve. 

Vice- Diplomatico Vice ft. Diplomatico Planas Rum 

Ingredients
2 oz Daiquiri concentrate (frozen)
2 oz Piña Colada mix (frozen)
2.5 oz Diplomatico Planas Rum 

Directions
Blend daiquiri concentrate with rum and ice. Blend Piña Colada mix. Pour both blends together in a coup glass.
