Shamrock Rice Krispies

I love these cute Shamrock Rice Krispies treats.  It is a festive way to celebrate St, Patrick's Day!  Kids will love these in their lunchbox.  Adults will devour them. 






Items needed:

3 ½ Tablespoons Unsalted Butter, plus additional for greasing
½ teaspoon Vanilla Extract
20 drops Green Food Coloring
4 cups Miniature Marshmallows
5 ½ cups Rice Krispies Cereal
3-inch Shamrock Shaped Cookie Cutter
Wax Paper

Lay out a couple of sheets of wax paper. Grease a 3-inch shamrock shaped cookie cutter with butter, then place it on one of the sheets of wax paper. Also, set butter to the side for greasing hands. In a large heavy pot and over medium-low heat, melt 3 ½ tablespoons butter while stirring. Once melted add vanilla extract and green food coloring, then stir. Add marshmallows and stir until completely melted and creamy. Remove pot from stove. Working quickly, grease hands, then scoop out rice krispies and place down inside of the cookie cutter on the sheets of wax paper. Use fingers to press and flatten into the shamrock shape, then remove cookie cutter. Repeat this process until all mixture is used, making sure to grease hands and cookie cutter often to keep from sticking. Let sit for a couple of hours, then serve or place in treat bags.
